Default best breed to assist the disabled?

I have heard of dogs being used to assist people with disabilities, particularly the blind. What are the dog breeds best suited for this kind of activity? I am asking this regarding dog breeds suitable for training to provide assistance to people who have orthopedic disabilities, particularly to those who are wheelchair-bound.

I know several people who use standard poodles as therapy or service dogs. There are some email lists on yahoo for those who want to train their own service dog and you can learn a lot from the people on that list. I know some people who have toy poodles that use them as therapy dogs for when they have seizures or panic attacks, even blood sugar fluctuations. The dogs can sense an attack coming on and alert the person which helps them to get the right medication in time.
